Magh Bihu festival: Traditional food in high demand

GUWAHATI: With Magh Bihu round the corner, the demand for normal food pieces has long gone up with people from across the state interested in in the community made seasonal cuisine. From milk products to fish, chocolates and cakes, imported or packaged meals pieces are being not noted in favour in their indigenous varieties.

For example, pieces from dairy giants which typically rule the marketplace have taken a back seat as the demand for home-made products has long gone up. "I have already sold more than 20 litres of curd so far and I also have an advance order for around 120 litres. We are doing good business here and this is the best time of the year for us," mentioned Xun Barman who hails from Sarbhog in Barpeta district, and was promoting dairy pieces at a makeshift stall near Dighalipukhuri in the city. He also pointed out that one litre of buffalo curd costs around Rs 180 throughout this time.


With a prime demand for in the community prepared curd in the market, branded dairy pieces like packaged yogurt had been for once being not noted. In Upper Assam, villagers from places like Janjhi which might be identified for their traditional milk products, are running round-the-clock to meet the surprising surge in demand.


"These traditional forms of curd are creamy in texture, have more fat content and often melt in the mouth. Unlike other forms of curd, it is sour and clear white in colour. Prepared from raw buffalo milk, traditional yogurt is a favourite dish in every Assamese household during the festival of Magh Bihu," mentioned a trader at Jhanji Mukh in Jorhat.


Jalpan, a neighborhood type of curd with flattened rice and molasses, is every other traditional favorite throughout this pageant. The demand for native kinds of fish has also long gone up with Bhokuwa or Rahu, ferried from Andhra Pradesh and different states, being ignored throughout this time.
