BENGALURU: You can quickly experience ragi muddes (ragi balls) at Indira Canteens. By August, the kitchens are expected to get mudde-making machines evolved by Mysuru-based Central Food Technological Research Institute (CFTRI).
BBMP particular commissioner (finance) Manoj Rajan, who's answerable for Indira Canteens, said ragi balls shall be served for lunch and dinner once the machines are installed. Mudde figures prominently at the menu of Appaji Canteen, launched by the JD (S) in 2017. Twenty-two kitchens supply meals to 198 Indira Canteens in the BBMP limits. Chef Talk runs 110 canteens, and Rewards the remaining.
“We take comments from the general public to make our canteens higher and that’s how we offered payasam in February. We received requests for ragi balls too, and we spoke to the CFTRI. As a pilot, we offered ragi balls in eight canteens which people appreciated. However, machines produced handiest 250 ragi balls an hour. We asked the CFTRI to up the capacity of the machines,” Rajan added.
