Coimbatore: Some retail outlets are never identified by their christened name. They are invariably identified by how consumers make a choice to bear in mind it. One such shop is Kulandhai Kadai at Kempatti Colony. The shop was began in 1999 by Okay Kulandaivel, 54, as C R Biriyani Centre. C R stands for Coimbatore Rusi. But people in the locality had identified him as Kulandai and the shop came to be referred to as Kulandhai Kadai.

Kulandaivel, who hails from a family of conventional butchers, used to paintings at a butcher’s shop at S H Colony at Ukkadam. Later, he also doubled as a second-hand vehicle broker. “The serial blasts of 1998 severely hit each the businesses and I used to be left and not using a livelihood. That was after I thought of beginning a biriyani shop,” says Kulandaivel.

Though he had no prior experience in making biriyani, Kulandaivel determined to begin the shop in a gut feeling. Initially, he was helped by an octogenarian referred to as Kareem. “He was staying in my locality and he had no person to care for. He used to cook dinner at functions and spend the cash he earned on children in the locality,” says Kulandaivel.

When he determined to begin the shop, Kareem, then 82, guided him with the biriyani recipe. “For the primary couple of months, I struggled to get the recipe proper. But once I were given the hang of it, i have made sure to stick to it till date,” says Kulandaivel.

Kulandaivel prepares the biriyani and masalas all by himself. “If I have to head out of the city, I would close the shop for that day. I don’t allow any individual else to cook dinner. This is how I make sure that the trademark style is maintained,” says Kulandaivel.

Kulandaivel began the shop with just 5 dishes – mutton biriyani, brain curry, thalai curry, gut fry and liver fry. He used to arrange the dishes at home and bring them to the shop, which he began as a thattu kadai. Later, he expanded the shop and put tables and chairs. Today, the shop can accommodate round a dozen people at a time.

According to Kulandaivel, mutton is the beef intended for biriyani. “Chicken wouldn’t lend as much a flavour to biriyani as mutton does,” he says and provides that’s why even as of late he has now not introduced hen biriyani despite the fact that he had added hen side dishes to the menu. He has also improvised the dish kuzhambu omelette, by including spices to the egg. “It was an rapid hit,” he says.

Today, the shop has consumers now not simplest from town but also from different puts. People from Tirupur, Pollachi and Dindigul, make it a point to visit the shop when they visit town. On a Saturday afternoon, a customer from Dindigul, who was in the city for a industry deal, was observed taking parcels again home. He says he never misses to visit the shop when he's in the city.

A Marimuthu, 27, who works at a private bank in the city, says he visits the shop every week. “The mutton biryani and thalai curry are favourites at this place. I keep coming with my buddies to savour them,” he provides.
