In Hyderabad's old town, the custom of hand-made ‘seviyah’ (vermicelli) continues in some families regardless of the discovery of machines that may make the noodles-like sweet dish for half the associated fee. The hand-made seviyah though tastes better and are nonetheless preferred. Seviyah is a staple Ramazan dish, a special variety of which is synonymous with Eid celebrations.
